Objectives
1) Study the physicochemical properties of the must and concentrate of elderberries;
2) Validate the process for determination of captan and its metabolites
3) Evaluate the levels of captan and its metabolites of elderberry concentrate and must of different origins;
4) Study and optimize the fining process for elderberry must and concentrate;
5) Investigate the effect of binding agents on reducing the levels of captan and its metabolites, as well as on the quality characteristics of elderberry must and concentrate;
6) Demonstrate on a relevant scale the process to reduce the levels of captan and its metabolites in elderberry must and concentrate.

Activity 1 – Study of captan content and its metabolites in elderberry musts and concentrate
Activity 2 – Study of the application of binding agents to reduce the content of captan and tetrahydrophthalimide
Activity 3- Demonstration of the potential of the products and processes developed
Activity 4 – Dissemination, communication and exploitation of the project results
Activity 5 – Technical management of the project

The aim is to achieve one process, namely develop and optimize a fining process that allows for the reduction of captan and its metabolites in elderberry must and concentrate.
