Project description: In recent years, blueberry cultivation in Portugal has grown significantly in terms of production. However, a considerable percentage of production does not meet the standards required for fresh marketing, representing economic losses for the sector. To address this issue, the InovBlueValue project aims to develop two products based on discarded blueberries: a multifunctional extract with colouring and antioxidant properties, and an extruded blueberry-based snack incorporating the multifunctional extract. These solutions will enable the valorisation of discarded blueberries through the creation of new value-added products, contributing to the sustainability of the blueberry production chain.

  • Characterise the different categories of discarded blueberries;
  • Study the extraction and stabilisation process to obtain a multifunctional blueberry extract from the selected categories of discarded fruit; the different categories of discarded blueberries;
  • Study the extrusion process to obtain a snack incorporating blueberry powder and the multifunctional extract;
  • Monitor the physical-chemical and sensory characteristics and bioactivities of the extruded snack throughout its shelf life;
  • Validate, on an industrially relevant scale, the multifunctionality of the extract in a pastry product.
