Project description: The SambucuSafe project aims to develop and optimize a bonding process that allows the reduction of captan and its metabolites in wort and elderberry concentrate to legally permitted levels in the European Union. SambucuSafe has a direct impact on the National Research and Innovation strategy of processes and products for safer, healthier and more sustainable food systems, in addition to the added value for the economy.

  • 1) To study the physicochemical properties of must and concentrate of elderberry;
  • 2) Validate the process of determination of captan and its metabolites
  • 3) To evaluate the contents of captan and its metabolites in the concentrate and must of elderberry from different sources;
  • 4) Study and optimize the gluing process for must and concentrate of elderberry;
  • 5) To investigate the effect of gluing agents on the reduction of captan and its metabolites, as well as on the quality characteristics of the must and concentrate of gooseberry;
  • 6) Stagger the gluing process to reduce the contents of captan and its metabolites in wort and elderberry concentrate.
  • Activity 1 -Study of the content of captan and its metabolites from musts and concentrate of elderberry
  • Activity 2 – Study of the application of bonding agents to reduce the content of captan and tetrahydrophthalimide
  • Activity 3- Demonstration of the potential of the developed process
  • Activity 4 – Dissemination, communication and exploitation of project results Activity 5 – Technical management of the project
