Project description: The D2INNOV project aims to respond to the needs of society and the market in terms of vitamin D-fortified food products, using the milling, nutraceuticals, and pharmaceutical extracts sectors as case studies. It focuses on the development of two products: i) a mushroom powder with a vitamin D2 content of at least 580 µg/g to replace synthetic products, ii) a natural extract with at least 90% purity of vitamin D2, targeting different population groups, through the optimization of radiation procedures for the conversion of ergosterol into vitamin D2.

  • 1) Study and optimize the process of obtaining mushroom powder with vitamin D2,

  • A mushroom powder with vitamin D2, with a content of at least 580 µg/g of mushroom powder, which complies with the requirements for mushroom powder with vitamin D2 listed in the Union list of authorized novel foods (Implementing Regulation (EU) 2017/2470);
  • An integrated process to produce mushroom powder with vitamin D2, including the steps of cleaning, drying, grinding, and UV irradiation, with a processing capacity of approximately 30 kg/h.
  • A natural extract with at least 90% purity in vitamin D2, obtained from mushroom powder and with the quality required for the pharmaceutical or cosmetic industry.
